Pad Thai Noodles

Littlemissparfait’s first posting in the kitchen.. How exciting.. :p FINALLY got some time during the weekend to cook something! Had this recipe book for like at least a month and my hands are itching for action. My first adventure is with Pad Thai Noodles… I love thai food and really like the pad thai noodles at Thai Express.. So how does mine compare to that of Thai Express? I find it ok but my boyfriend likes it alot. Pretty simple to make… Give it a try! 😀

pad thai noodles

Ingredients
– 190g dried rice noodles
– 3 TBS veg oil
– 90g firm tofu cut into small cubes
– 2 finely chopped garlic cloves
– 1 TBS dried shrimp
– 90ml chicken stock
– 3 TBS fish sauce
– 1 TBS soy sauce
– 2 eggs beaten
– 3 TBS roasted peanuts
– 1 small bunch of spring onion
– 60g bean sprout

How-to
Soak rice noodles in water @ room temp for about 10min, drain and set aside

In a wok/frying pan, heat oil. Add tofu, garlic, dry shrimp and stir fry for ~1min till garlic is brown

Add noodles and stir fry. Then add stock and continue cooking for 2-3min till noodles are tender

Reduce to medium heat and add fish sauce, soy sauce.

Add eggs and stir fry til eggs are cooked and dry (1-2min)

Add peanuts, spring onion and bean sprouts and stir to mix.

My notes
You can add more dried shrimp as preferred.
Chicken stock can be replaced with water but stock definitely taste better. 🙂
If one is not used to eating raw bean sprout, it can be added to the mix together with the fish sauce to cook it longer
